Hello everyone! I haven't posted for a while because I have been busy with work, lifting, and of course my family and puppy! However, I wanted to share some news with you, in the hopes that it can help someone. I've had gastrointestinal problems for as long as I can remember. After finding out a few years ago that gluten was killing me (probably celiac but don't want to eat gluten for the test), I was still having a lot of problems. After a lot of research and persistence, I was diagnosed with Hashimotos Thyroiditis, Adrenal Fatigue, Leaky Gut, and SIBO. I have been on "healing" diets - AIP - to relief symptoms but I am still having a lot of issues with carbohydrate malabsorption. After more research, I decided that Keto is worth a try and I am looking forward to it. I will be posting recipes on my blog as I experiment. I eat mostly meat, eggs, and vegetables, but I do love a sweet treat occasionally! And yes, I still body build and track my macros! :-)

Blackberry Fat Bombs 128g Coconut Butter 2 oz Blackberries 1 tsp. stevia 120g Coconut oil Pinch of Salt Melt all ingredients together in a saucepan. Pour batter into a glass pan coated with parchment paper. Refrigerate or Freeze until the set up. Cut into squares, and enjoy! For the Vanilla ones, omit the blackberries and add 1tsp. Vanilla and 1 can of full fat coconut milk. | Blueberry Keto Muffins 63g Coconut Flour 1/4 tsp Baking Soda Pinch of Salt 7g Honey (Optional) 120g Coconut Milk - Light or Canned 60g Coconut Oil, Melted 3 Eggs 1 tsp. Stevia 1/2 tsp. Vanilla 4 oz Fresh Blueberries Mix together all ingredients except for blueberries. Add in blueberries. Bake in silicone muffin cups - sprayed with coconut oil - at 350 for 30-35 minutes. Enjoy! Modified from livinghealthywithchocolate |
