2 cups oat flour (I get rolled oats and grind them into a fine flour in my Ninja)
1 cup coconut flour
30g ground flax
1 tsp baking soda
3 eggs
20oz unsweetened applesauce
256g peanut butter
80g coconut oil (melted)
Mix coconut oil, eggs, peanut butter, and applesauce then add in dry ingredients.
Batter should be thick but if it isn't spreadable add either more applesauce or peanut butter until desired consistency.
Press into 8x8 pan with parchment paper and bake at 350 for 60 minutes.
Cool then Frost (recipe below)
Frosting
1 cup greek yogurt
128g peanut butter
Mix and frost the cooled cake!
Cut and store cake in refrigerator.
